Located within an intimate space found in the newly renovated Hilton West Palm Beach, Moody Tongue Sushi presents exclusive 8 course and 13 course omakase experiences highlighting a hyper-seasonal, elevated sushi menu from Executive Sushi Chef Hiromi Iwakiri alongside a curated beer pairing from MICHELIN-starred Moody Tongue Brewery's acclaimed brewmaster Jared Rouben.
Guests will enjoy an evolving menu highlighting pairings such as a King Crab Gunkan, served with English pea and trout roe, with a Daidai Lager featuring Japanese bitter orange; Madai, served with Florida orange zest and sea salt, with an Orange Blossom Belgian Blonde; and a decadent Hokkaido Scallop Hand Roll, presented with potato skin, corn, bacon fat and wasabi, beautifully paired with a Piquette Cerise featuring Michigan Balaton cherries. A curated menu of spirits, wines and cocktails is available as well.
